research question:
Which visual art techniques can be identified to improve engagement in
iPhone games?

key words:
successful art styles in games

4 key aspects / concepts:

- look at art throughout history, why did some do well and others not.
continue through to present IOS Games, search and discuss how
art/games become popular (advertising, word of mouth, ect)

- investigate some well known games currently doing well and their
lookalikes/copies, find common links in art styes both good and bad
between these games

- research how different age groups, genders, and countries of origin
affect how a players perception of a "good" games is created.

- use the data gathered to make a simple game where the art style can
be switched from good to bad and see how this affects its
replay-ability

My thoughts so far.  You have sketched out a huge topic.  So huge I fear you will get lost in it!
You will need to refine!  What do you mean by visual art techniques?
How will this impact of the work you want to make?

Some response to your key aspects:

- look at art throughout history, why did some do well and others not.
continue through to present IOS Games, search and discuss how
art/games become popular (advertising, word of mouth, ect)

This would be impossible to do.  How would you determine which art movements (which is what i think you mean) did well? Do you mean painting or sculpture or video or...?

- investigate some well known games currently doing well and their
lookalikes/copies, find common links in art styes both good and bad
between these games

I think this methodology has potential.  It would be investigating and determining if possible, whether games have drawn from established art styles and movements (do you mean 20thc painting?) .  Do you have some games in mind? I suspect it is to be found in games as in advertising, but i suspect it may be much more subtle than you think!

- research how different age groups, genders, and countries of origin
affect how a players perception of a "good" games is created.

There may well be existing research on this.  Do you know?  Anyway too huge for Hons.  Though you could certainly take one of these elements and develop a research project around that.  Or you could try to determine by looking at the literature and conducting a small survey  what makes 'a good game'.

- use the data gathered to make a simple game where the art style can
be switched from good to bad and see how this affects its
replay-ability

You would need to know what good and bad games are first.
